{ Interior Inspiration } Peanut Butter Cookies

We made up a batch of peanut butter cookies this evening, from The Hummingbird Bakery Cookbook and they turned out so well that I just had to share the recipe! We only made up half the batch suggested in the book and emitted the chocolate chips so I'll share the recipe we used to make up around 14 cookies.

110g unsalted butter, room temp
100g caster sugar
100g soft light brown sugar
1 egg
1/4 tsp vanilla extract
120g crunchy peanut butter
160g plain flour
1 1/4 tsp bicarbonate of soda
1/4 tsp salt
4 baking trays, lined with greaseproof paper

1. Preheat the oven to 170C, Gas 3. Fan assisted ovens lower the temp by 10-20C.
2. Mix the butter and sugars together until light and fluffy.
3. Add the egg, mixing well and scraping any unmixed ingredients from the side of the bowl.
4. Beat in the vanilla and peanut butter.
5. Add the flour, bicarbonate of soda and salt gradually. Mix well until a smooth dough is formed
6. Split the mixture evenly between your prepared baking trays.
7. Bake for about 10 minutes until golden brown around the edges and quite flat.
8. Leave the cookies to cool slightly on the trays before turning out onto a wire cooling rack to cook completely. They should be nicely soft and chewy.
